Bedah Kuliner: Roti Boy

Ini cerite dari sahabat, namanye Bang Wiskul:
Kali ini Bang Wiskul ngebedah makanan atawa kuliner nyang udeh kagak asing lagi bagi kite semua. Namanye: Roti Boy. Roti nyang ditemuin pertama ame orang Malaysia di negara bagian Penang taon 1998 ini, udeh menjalar dimane-mane di seantero Indonesia, doi punya outlet bejibun di berbagai lokasi strategis di Indonesia. “Branded name” nye doi: Rotiboy Bakeshoppe.
Bang Wiskul kepengen banget ngebedah entu roti buat ditulis hasil observasinye. Deeeeuuuu…! Kire-kire kayak begini nech:
Sesuai ame petunjuk nyang ada di kertas kemasan entu di tiap rotinye, Bang Wiskul nyobain ngikutin sesuai nyang tertera “follow these 4 easy steps.” Doi panasin dulu oven sampe kire-kire 175 degree Celcius.
Abis entu ditaroh dah entu “buns,” istilah buat tiap potong roti boy, ditaroh di oven. Dipanasin antara 5 sampe 7 menitan. Posisi pemanas: “minimum top heat,” maksudnye pemanas bagian atasnye kagak diaktifkan.
Selesai waktunye, roti diambil dah. Ditaroh dulu roti di luar oven, ibaratnye diangin-anginin dulu deh pada suhu ruangan. Kira-kira udeh 1 menit, kira-kira “maximum crispiness.” Maksudnye, kegaringannye udeh maksimum banget nech. Roti Boy udeh siap disantap dah.
Sebelon disantap, kudu dibelah dulu nech bagian dalamnye (dibedah). Baru potongan-potongan si buns ini mulai dikunyah. Toppingnye nyang coklat tua entu berasa mentega, tepung gula, aroama telor, tepung terigu en moka pasta.
Nah… ciri khas dari roti boy ini, kentara banget aroma ama rasa kopinye (sebenernye rasa: mocca), rasa mentega (margarine en butter, dua-duanye ada), rasa susu en rasa manisnye. Kalo sampe taon 2010 akhir, disekitar rasanye entu ada unsur asin (mentega) atawa asemnye (keju?) nyang dibuat kentara, kalo di taon 2011 ini, kagak ada nyang dominan dari sisi rasa adonan rotinye. Semua dibuat proporsional. Tekstur roti tetap renyah en rada kenyal gitu.
Dari sisi kegurihan en kegaringan, masih top-top ajah dah. Apalagi kalo kite ngikutin petunjuk sesuai di bungkusnye entu. Pake oven jangan pake microwave atawa jangan dimasukin kulkas gitu. “Note: microwave and refrigeration are not recommended.” Trus kalo naroh buat disimpen, ditaroh di freezer nye kulkas sesuai petunjuk kemasan.
Roti boy nyang isinye resep per 10 buns entu terdiri dari adonan 400 gr tepung terigu protein tinggi, 100 gr tepung terigu protein sedang, 25 gr susu bubuk, 10 gr ragi instan, 150 gr gula pasir, 3 kuning telur, 1 btr telur, 300 ml susu cair, 100 gr mentega, ¼ sdt garam.
Bahan isinye 150 gr mentega, entu kentara banget secara visual, kalo kita bedah dalemannye. Bahan toppingnye 100 gr mentega, 100 gr tepung gula, 2 btr telur, 150 gr tepung terigu, 1 sdt moka pasta. Ternyata kagak ada kejunye yah. Meskipun rasanye ada kayak aroma-aroma keju gitu deh.
Sejak beberapa waktu nyang lalu, emang ada produk tambahan, atau tipe lain dari roti boy. Bentuknye lebih kecil, penampakan luarnye mirip bakpia yogya gitu. Atau bisa jadi kayak kue sus gitu deh. Tapi kalo kite rasain, tetap dari adonan roti nyang sama ama roti boy original.
Seperti biasanye, Bang Wiskul sebelon memanaskan di oven, baca petunjuk nyang tertera di kemasan entu roti boy cilik tersebut. “preheat your conventional oven/oven toaster to approximately 150 degree Celcius”
Place the buns on a baking tray. Warmup approximately 2-3 minutes (with minimum top heat). Take it out. Leave the buns at room temperature for a while. Catatan nyang lain, sama persis ame roti boy nyang asli atawa nyang gede.
Abis dibedah ame Bang Wiskul, potongannye disantap! Naah…. kali ini, si “cilik” ini, rasanya emang “keju” banget dah! Tekstur adonan rotinye sangat lembut en sangat kenyal dengan rasa adonan rada “plenty” gitu atawa rada standar roti boy. Tapi kagak pake mocca atawa aroma kopi, kagak pake margarine, tapi pake mentega gitu. Sekilas mengingatkan Bang Wiskul ame teksturnye roti unyil produk Bogor dimasa jaya-jayanye roti unyil Bogor jaman dulu.
